anyway so just been working and attending job interviews. yes thats right i had a job interview this time last week at bunbury SJOG. was so excited. thanks to maddi and jemimah for getting me there (poor jemimah was not happy to be in the car) but it went really well and now im just waiting to hear back from them. and also trying to decide if i actualy want to move away from life up here. hmmm
fighting the bugs as well. yesterday was laid down by a horrific headache and a lowgrade temp. and last week was walking around with terrible stomach pains but thats pretty much sorted now just in case you care. to make this post more interesting i made a lime white choc angel cheesecake saturday for sunday coffee. it didnt turn out perfect as i didnt have the right ingredients but hey, we nurses need to be creative in this global down turn and i applied this to my cooking haha. it tasted alright but heres a similar recipe:
Ingredients
- extra whipped cream
- grated rind and juice of 2 limes
- icing sugar
- 1 cup biscuit crumbs
- 1 cup caster sugar
- 1/2 cup desiccated coconut
- 1/2 cup passion fruit pulp
- 2 egg whites, beaten to soft peaks
- 3 teaspoons gelatine dissolved in 1/4 cup boiling water
- 300ml cream, beaten
- 500g block PHILADELPHIA Cream Cheese, softened
- 80g butter, melted
Method
- Combine biscuits, coconut and butter. Press into a buttered and lined 22cm spring form pan. Chill.
- Beat the PHILLY, sugar, and lime until smooth. Add the gelatine mixture and passionfruit. Fold in the whipped cream and beaten egg whites.
- Pour into prepared crust and refrigerate until set. Decorate with whipped cream and dust heavily with icing sugar
i just added lime juice and grind from two fresh limes to give it that summery tang. it was great!!
so lookin forward to seeing my man this weekend. im terrible at long distance. also hoping to get the iphone 5 one of these days if someoen doesnt convince me other wise to get the samsung. but oh well.
lifes gonna be busy what with weddings, hens nights, kitchen teas, babies, job decisions, life decisions. thankfully yesterday (pre headache pain) we got to stop and listen to an AMAZING sermon on Rev 1: 4 and 5.
